Fresh baked English Muffin Bread!!!

Decided I would treat Red to some special baked bread to go with her Polish Potato Salad I am making her tonight for dinner and decided I would share the results and recipe with you!!!  This is so easy to make and no matter how many times I have made it, it always turns out wonderful!!!  I doubled the batch for two loaves!!!  Yummy goodness indeed!!!


English Muffin Bread

2-1/2 to 3 c. flour
1 pkg. active dry yeast
¾ t. salt
1 T. sugar

In large mixer bowl combine 1 c. flour and the yeast. In saucepan heat 1-1/4 c. water, sugar, and ¾ t. salt till warm (115º-120º), stirring to dissolve sugar. Add to dry mixture in bowl. Beat at low speed with electric mixer for ½ min., scraping bowl. Beat 3 min. at high speed. By hand, stir in enough remaining flour to make a soft dough. Shape into ball.

Place in lightly greased bowl; turn once to grease surface. Cover; let rise until double (about 1 hr.). Punch down. Cover; let rest 10 min.

Grease a 1-quart casserole; sprinkle with cornmeal. Place dough in casserole; sprinkle top with cornmeal. Cover; let rise till double (30 to 45 min.).

Bake at 400º for 40 to 45 min. Remove from dish; cool.

Yield: 1 loaf.

* This recipe can be doubled.

Joe’s Joyful Chocolate Chip Cookies

Decided to try something different this morning for Dessert while Laura was at work as a special treat for her!  She was going through Pinterest the other day salivating over all the chocolate chip cookie recipes so I decided to make her a big batch!  I played with one of her favorite recipes but gave it a bit of a twist and this is the result!  I call them: 

Joe’s Joyful Chocolate Chip Cookies


Here is the recipe if you would like to bake your own!

2-1/4 cups flour
1 teaspoon baking soda
1 cup butter or margarine, softened
¼ cup granulated sugar
¾ cup brown sugar
1 teaspoon vanilla
1 package (3-1/2 ounces) chocolate instant pudding
2 eggs
1 package (12 ounces) semisweet mini chocolate chips

Combine flour and baking soda; set aside. Combine butter, sugars, vanilla and pudding mix in large mixer bowl; beat until smooth and creamy. Beat in eggs; gradually add flour mixture. Stir in mini chocolate chips (batter will be stiff). Drop by a teaspoonful, about 2 inches apart, onto ungreased cookie sheets.

Bake at 375º for 12 minutes, or until browned. Press down lightly to flatten cookie and leave rest on hot cookie sheet 5 minutes before removing to serving container or plate!


Yield: 4 dozen cookies
