I decided to make something a bit different once more for dinner tonight as Laura was working late and I wanted to surprise her with something fun and didn’t feel like cooking the same ol’ stuff or working on something hard. Here is my new recipe that I have named: Pork Chop and Baked Beans!
The concept is very easy, take a large can of your favorite flavor Baked Beans and dump them into a 9″ x 13″casserole dish. Cut up your pork sirloin chops into reasonable serving size pieces (I used about 2lbs) top with diced onions and then sprinkle with basil, thyme, dill weed and black pepper or your favorite herbs, then bake in the oven at 350 degrees for 1 hour 20 minutes! Take foil off and bake another 1o minutes to brown a bit! Serve with Lemon Roasted Potatoes and Perfect Baked Apples! I went out and picked ours off one of our trees! Everything bakes at the same temperature just different times… put them in so they all finish at the same time and you have a wonderful warm fall meal on a chilly evening!
Takes maybe 10 to 15 minutes to prepare and then go enjoy a good book, the news, football or internet while it bakes! Simple, inexpensive and yet elegant! The Pork Chops are moist and tasty! Baked potatoes can be decorated any way you like to burst with flavor in your mouth and the apples lend a slight crunch and zesty-ness to the whole meal! They are like having dessert with your dinner! Enjoy!
