We had some thick pork chops and I was thinking Shish Kabobs! Laura had gotten some peach mango jam from a friend a while back so I took some of that and some ground ginger, thyme and dill weed, mixed it up and marinated the pork I had cut in chunks for about a half hour. I cut up a green pepper and a sweet onion into chunks as well and proceeded to put them on skewers with the pork I had chopped up and marinated for a half hour.
Threw a pot on the stove with white rice, black bean and chicken stock for 20 minutes and then put the skewers on the grill for the last few minutes of the rice cooking time until the pork was done.
Put the Shish Kabobs over the rice and beans in a serving dish and served it with a side salad! I will let the pictures make you hungry! Boy it was good!!!
